The food cater was in full compliance with the national contract. There are no labeling requirements for sandwich ingredients or spreads. Meat and cheese for lunches have a quality requirement which shown on the original container. All factory packaged food is labeled with the ingredients as required by FDA.
It is a general practice for those who are allergic to certain foods to let the Food Unit Leaders (FDUL) know so he or she can work with kitchen and identify which items should be eliminated from that person’s sack lunch. Many times the kitchen is making spreads with multiple ingredients to increase the variety, especially when we are in a long fore such as the current one. If the FDUL is notified of an allergy they can be watching to make sure that the allergic foods are not included.
The contracting officer’s representative is working with the contractor to see if there is a way to include voluntary labeling of products known allergens.
